March Food Challenge
Salad:
Mixed Greens
Mandarin Oranges
Crumbled Low Fat Feta Cheese
& for the green:
Steamed, then chilled, green beans
Pistachios
Blood Orange Vinaigrette:
Juice from 1/2 of a Blood Orange
1 1/2 tbsp Olive Oil
1 tbsp. Balsamic Vinaigrette
3 twirls of fresh, ground black pepper
1 pinch of Oregano
1 dash of Garlic Salt
Whisk all together and drizzle over salad (makes enough for 2)
It is DELISH.
